For 6 servings
500 g soba noodles
400 g smoked trout fillets
4 spring onions
4 teaspoons soy sauce
4 tablespoons sesame oil
3 teaspoons sesame seeds
Cook the soba noodles in abundant boiling salted water according to package instructions. Drain, transfer to a pan of cold water and drain again.
Cut the smoked trout fillets into thin strips. Trim the root ends of the spring onions and finely slice them, including some of the green portion. Transfer the cooked soba noodles to a serving dish, drizzle with the soy sauce and the sesame oil. Add the smoked trout and the spring onions and toss.
In a dry nonstick pan briefly toast the sesame seeds taking care that they do not burn. Sprinkle them on the prepared soba noodles and serve promptly.
